Cold soup makes a hot day better

This amazing cold soup is a real treat during the dog days of summer. It is refreshing and low calorie if made with low fat yogurt. This recipe only makes 4 servings, so you might want to double it. On hot days, cold soup ain’t bad.

Chilled Curried Cucumber Soup

8    medium cucumbers, all but one peeled and coarsely chopped
¼ cup    fresh lemon juice
2 tsp.    freshley ground black pepper
2 T.    white wine vinegar
1½    tsp. hot curry powder
            Pinch of cayenne pepper
1 cup    plain yogurt, (use low fat for diet soup)

Put everything but the reserved cucumber and the yogurt in a large bowl and combine thoroughly. Working in batches, puree the mixture in a blender. Pass through a fine strainer into a large bowl and whisk in the yogurt. Adjust the seasoning to taste.
Quarter the remaining cucumber lenthwise. Remove seeds and slice thinly. Serve the soup in individual bowls and garnish with the sliced cucumber,
