5 to 7 yellow squash

1 large vidalia onion

1/2 cup flour

2 eggs

1 tsp salt

1 tsp pepper …

Is your garden exploding with yellow squash? Here’s what you can do with it. 
5 to 7 yellow squash
1 large vidalia onion
1/2 cup flour
2 eggs
1 tsp salt
1 tsp pepper
1 tsp baking powder
whipping cream
vegetable oil
Dice squash and onion. Mix all ingredients but vegetable oil. 
Add enough whipping cream to make it the consistency of pancake batter. 
Over medium heat, add oil and spoonfuls of squash batter, smoothing into patties. 
Saute on both sides until golden brown and serve. Yuuum!
