Fruit salad is perfect in summer

All of these ingredients are perfect for the summer. Enjoy making and eating this delightful fruit salad. It is unusual but so tasty. Before the world began to shrink we were unable to have access to all the fresh fruits we have today.

Avocado, Strawberry,
and Orange Salad
Makes 16 servings

4    navel oranges
3    pints strawberries
3    Tbsp. balsamic vinegar
1/4    cup avocado or corn oil
1 tsp. coarsely cracked black pepper
4    ripe avocados, preferably Hass
2 to 3 Tbsp. fresh lemon juice

Cut ends off oranges and cut off peel, removing all of the bitter white pith. Cut oranges crosswise into 1/2-inch slices, then cut slices into 1/2-inch pieces.
Hull strawberries and halve or quarter, depending on size. In a medium bowl combine strawberries and oranges with balsamic vinegar, avocado or corn oil and pepper. Toss gently. (Recipe can be prepared to this point up to 4 hours ahead. Cover and refrigerate.)
Up to 2 hours before serving, peel avocados and cut off the pit lengthwise into 1/2-inch slices. Arrange around the rim of a large platter and brush all over with lemon juice to prevent discoloration. Mound strawberries and oranges in the center, cover with plastic wrap and let stand at room temperature until serving time.
