Patriotic Punch

This wonderful punch is something you can serve to your friends and family with a near guarantee it will be loved by all.   I have learned to make at least a double batch of this recipe when I serve it – especially when it’s hot – as everyone loves it and it disappears fast.
Our then 2-year-old niece Kelley decided this was her new favorite the last time we celebrated the 4th. She searched for more as soon as her cup was empty.
Perhaps you have Lexington County strawberries and blueberries in your freezer.  If not, any that you find will be good but if grown locally they are much better.
This is easy to make and serves 10.
2 cups of strawberries frozen or fresh, cleaned, topped and chopped
1 cup of whole blueberries fresh if you can get them. Leave them out if you don’t like them as this is all about strawberries.
2 small boxes of strawberry gelatin
1 cup of sugar
Make the gelatin according to the directions but double the hot water.
Add sugar and dissolve, then add the strawberries while the liquid is still hot.
Allow gelatin and strawberry mixture  to cool.  Pour into freezer safe containers and freeze hard. I always make a few extra containers to have on hand.
Remove the frozen mixture from the containers by letting it sit about 10 minutes.
Add frozen mixture to a large clear punch bowl or a large clear pitcher.
Use a clear punch bowl or pitcher as the color of the punch is beautiful.
This is easiest to serve in a punch bowl as everything can more easily be mixed. Any large container will do, just mix it first.
Pour an entire liter of Sprite or ginger ale over the frozen mixture.  Let this sit for another 10 minutes. Now add the blueberries.
Stir with a silver ladle to allow the flavors of the berries to mingle and garnish with a big bunch of mint from your garden.
The effect is a beautiful, delicious patriotic drink you can turn this into an adult beverage. The add-ins are endless.
I last served this on my porch in Lexington for photos for a book on Entertaining in South Carolina.  It was inviting to see an icy and colorful drink waiting to be enjoyed.
For the photos, we served it in a silver punch bowl surrounded by silver goblets.
A monogrammed, white linen table cloth along with an arrangement of pink crepe myrtles from the yard resting in an ancient porcelain base made for a scene of timeless delight.
