Get ready for a special treat. It used to be a luncheon favorite. The Chronicle’s publisher really loves it.
1 small pkg Lime Jello
1 cup boiling water
1 cup pineapple, crushed and drained (reserve juice)
1 tbsp flour
½ cup whipping cream
¼ cup sugar
1 cup lemon-lime soda
1 banana, sliced
1 egg, slightly beaten
¼ cup sharp American cheese
Dissolve Jello in boiling water; cool. Add lemon-lime soda. Chill until partilly set. Fold drained pineapple and bananas into Jello mixture. Turn into mold and chill. Combine sugar and flour in saucepan. Stir in reserve pineapple juice and egg. Cook and stir over low heat until thickened; chill. Whip cream and fold into cooked egg mixture. Spread over jello and sprinkle with cheese.
