Delicious casserole is for breakfast

This recipe is not for those healthy liars. When you see bacon grease, don’t run! Only eat this once a year. Just kidding! You can buy purchase a bag of croutons to save time with this recipe. This is a great breakfast casserole and it is delicious! 
Bacon Casserole
½ lb.    bacon, cooked crisp
2 Tbsp.    bacon drippings
2 cups    toasted bread crumbs
2    tomatoes, peeled and sliced
1 tsp.    salt
¼ tsp.    pepper
1 cup    grated Swiss cheese
1    egg
1 cup    milk
¼ tsp.    dry mustard

Crumble half of bacon slices with bread crumbs and drippings. Place in 1½ quart casserole. Add tomato slices. Combine seasonings and sprinkle on top. Top with grated cheese. Beat egg and milk together, pour over cheese. Bake 30 minutes at 350º. Place remaining slices of bacon on top, bake an additional 5 to 8 minutes. Yield: 4 servings. Whole canned tomatoes may be used. If desired, use more tomatoes than recipe suggests.
