Hey Lexington, get ready! This week I’m sharing a recipe for Lemon Squares. These are the best lemon squares I have ever tasted, and I mean ever. Follow the recipe exactly and you will be delighted.
If you can get the lemons from Glennville, GA, the squares are better because lemons like onions. Did you know that they grow better when they grow near each other? It’s in the soil. I don’t know why that’s not spelled out on the Glennville water tower. You know, that water tower just says ‘largest producer of Vidalia onions in the world’.

LEMON SQUARES

For the Crust: Sift 2 cups flour with 1/2 cup confectioners sugar. Mix with 1/2 lb. softened butter (2 sticks). Press into a 9-inch by 13-inch greased pan and bake at 350º for 25 minutes.
For the Filling:
1/3    cup fresh-squeezed lemon juice plus zest from the lemon
2    cups sugar
4    eggs
1/4    cup flour
1    tsp. baking powder
Beat together lemon juice, sugar and eggs. Add flour and baking powder. Pour over crust. Bake at 350º for 25 minutes. Cool (freeze if desired). Sprinkle with confectioners sugar before serving.
